The grill offers up a stainless steel cooking grate with 340 square inches of primary cooking surface and 125 square inches on the secondary raised ceramic coated wire grate.  It also features two separate burners rated at 10,000 BTU each (20,000 total) with temperature gauges right above the control knobs.  This temperature gauge location gives a temperature reading at the grate level for an accurate reading right where the food is actually being cooked.  It should come in handy for searing or braising food knowing at which temperature you are cooking it at.

From my understanding the burners heat up the infrared  heating panels and then they in turn give off the heat to the food.  This concept in practice would lock in moisture and help to prevent the dreaded grease flair ups common with open flame cooking.  I found that this grill needed at least 15 minutes heat up time and for better searing action more like 20 minutes.
From my experience it is imperative to keep the infrared panels and cooking grates very clean as it would diminish the effectiveness of this grill if they would become clogged or littered with greases, sauces or other debris so maintenance and regular cleaning is important.  The manufacturer recommends cleaning after each use and covering it to keep it in good shape and I couldn’t agree more.  If you aren’t going to clean it after each use or use heavy syrupy sauces and marinades look out as I am unsure this would be the grill you are looking for.  This grill has a place and is a value oriented infrared type grill. Vegetarian Yuba Rolls Recipe

Yuba, also known as tofu skin, was an ingredient I grew up eating at the family table. You may have eaten yuba rolls (seen jook guen) at dim sum restaurants–it is often wrapped around mushrooms and bamboo shoots. It’s first fried, then steamed.


In Shanghainese restaurants, yuba rolls are often served slightly chilled, with a sweeter soy sauce marinade. The combination of sugar, soy sauce, and Chinese black vinegar is one of the flavors combinations you’ll find in much of Shanghainese cuisine. My mother makes a very tasty version of this dish, and I’ll be sharing her recipe here.

Vegetarian Yuba Rolls Recipe

4 sheets of yuba (softened until pliable in cold water if dried–about 2-3 minutes)

2 cup dried shiitake mushrooms, reconstituted, stems removed and finely sliced

1/2 cup dried wood ear mushrooms, reconstituted and finely sliced

2 cloves garlic, finely minced

3/4 cup finely slivered bamboo shoots, preferably fresh

3 tbsp vegetable oil, divided

For the marinade:

2 tbsp oyster sauce

1 tsp light soy sauce

1 tsp dark soy sauce

1/2 tsp sugar

1 tsp cornstarch

1 tbsp Shao Xing wine (or dry sherry)

1 tsp Asian hot sauce, like sambal oelek (optional)

dash of pepper (white, preferably)

1/4 cup finely chopped green onion

1 tsp sesame oil

For the steaming liquid:

1/4 cup vegetable stock (or chicken stock, if not making vegetarian version)

2 tbsp Chinese black vinegar

1/2 tsp sugar

If the sheets of yuba are large (i.e. more than 10″ in diameter) slice them in half, length-wise, to make 8 sheets.

In a bowl, combine the shiitake mushrooms, wood ear mushrooms, bamboo shoots, garlic, and all the ingredients for the marinade to make the filling. In a small bowl, combine the stock, sugar and black vinegar and set aside.

In a skillet, heat 1 tbsp of oil over high heat. Stir-fry the filling mixture until cooked through, about 4-5 minutes. Set aside.

Spoon 2 tablespoons of filling onto a piece of yuba. Fold the ends inwards, then roll up the yuba so that the filling is secured inside (just as you would a burrito.) There is no need seal the yuba roll–it will seal itself. Repeat with the remaining filling and yuba.

In a clean skillet, heat the remaining 2 tablespoons oil over medium-high heat. Pan-fry the yuba rolls seam side down for 2-3 minutes per side, just until golden brown. Then, add the stock mixture to the pan. (The mixture will bubble up and begin to evaporate. Cover the skillet for about 5 minutes to allow the yuba to steam through, until all the liquid is absorbed.)

Slice the yuba rolls in half and serve as is, or with extra hot sauce or soy sauce for dipping.

Baked Tapioca Pudding

For much of my childhood, the concept of dessert after dinner was foreign. It’s true that the Chinese don’t have much of a sweets culture compared to western countries, and dinners at home often concluded with fresh fruit rather than a slice of cinnamony apple pie. On weekends, however, our family often went out for dim sum, and we were permitted to get plates of custardy egg tarts, or my favorite steamy-glassed bowls of baked tapioca pudding.

Baked Tapioca Pudding with Lotus Seed Paste
Pudding:
½ cup small pearl tapioca
2 ½ cups boiling water (for soaking tapioca)
3 1/4 cups whole milk
1/2 tsp kosher salt
3 tbsp custard powder, or vanilla pudding powder
4 tbsp butter
3 egg yolks
2/3 cup sugar
Topping:
¼ cup butter at room temperature
1 egg yolk
1/3 cup sugar
1 tsp vanilla extract
1 tbsp custard powder, or vanilla pudding powder
2/3 cup flour
small pinch of kosher salt
2 tbsp whole milk
Filling:
¾ cup lotus seed paste or red bean paste
To make the pudding:


Place the tapioca pearls in a mixing bowl, and pour the hot water over top. Give the tapioca a stir, then allow it to soak for about 30 minutes, until softened.

After 30 minutes, drain the tapioca in a fine-mesh sieve. Stir the tapioca to break up any clumps, and rinse it over cool, running water.

Add the drained tapioca, milk, salt, custard powder, and butter to the pot. On medium heat, cook, stirring occasionally, for about 10 minutes, until the mixture is steaming. Meanwhile, in a bowl, stir together the yolks and sugar. Temper the yolk mixture with the steaming milk by ladling a couple tablespoons of milk into the bowl at a time, and stirring til combined. When the egg mixture is warmed, pour everything back into the pot and continue to cook for another 15 minutes, stirring occasionally. (The custard will be rather runny, because it will continue to thicken in the oven when it bakes.) Set aside.

To make the topping:

Combine all the ingredients, except for the milk, together in a bowl. Gently knead the dough until it just comes together in your hands. Divide the dough into six equal pieces, and roll each piece into a ball. With the palm of your hand, gently flatten the ball until it reaches approximately ½ inch thickness. Repeat with the remaining balls of dough, and score the tops decoratively if you wish.

To assemble:

Preheat the oven to 350 degrees.

Divide the lotus seed paste evenly between six ovenproof ramekins by pressing the paste in an even layer along the bottom. Top each ramekin with approximately 2/3 cup of the pudding mixture. Gently place a round of dough on each of the puddings. Brush the tops of the dough with milk, then bake for approximately 30-35 minutes until the topping becomes lightly golden. Allow the puddings to cool for about 10 minutes before enjoying warm.

*Alternatively, to make one large baked tapioca pudding, simply press the lotus seed paste in an even layer on the bottom of a 6 cup baking dish, then top with the pudding mixture, and the flattened cookie dough topping. Bake in a preheated oven set to 350 degrees for 35-40 minutes, until the top is lightly golden. Allow the pudding to cool for 10 minutes before enjoying warm.
